A classic South African side - delicious with any Sunday Roast.

- Combine all the ingredients (except the sugar and oil) in a bowl.
- If the mixture is too stiff, add a splash of milk.
- Heat a little oil in pan and carefully put spoonfuls of the pumpkin mixture into the hot oil.
- Shallow-fry for about 5 – 10 minutes or until golden on both sides.
- Drain on paper towel, sprinkle with cinnamon sugar and keep warm, while you make the rest.
