Dark Rum Mojito

Have you ever thought of levelling up the classic mojito? The addition of dark rum to the classic recipe — in lieu of the white rum — really brings out extra depth and flavour in every sip. This dark rum mojito has a deep and rich flavour with a good amount of sweetness, and a blast of freshness from the mint. The recipe is simple: just muddle the mint, lemon, and simple syrup. Then add rum, lime cordial, soda water, garnish — and you’re good to go!

50ml Dark Rum (2 shots)
10ml
Simple Syrup
25ml Soda Water (1 shot)
1 dash  Lime Cordial
½  Lemon
8 Mint Leaves
1 Mint Sprig (Garnish)
1 Lemon Slice (Garnish)
1 Handful Ice

 

Pro tip: If you can’t find limes, you can substitute it with a shot of lime cordial and replace fresh lime with lemon.

1 Add mint, simple syrup, and a squeeze of lemon to a glass. 
2 Stir until mint is bruised (if you over-stir you will pulverise the mint — which is not what you want).
3 Add dark rum, lime cordial, ice, and soda water.
4 Garnish with lemon slice, orange twirl (if desired), and mint leaves.
