When it comes to cosy winter cocktails, few are as perfect as The Stay Insider. It’s made with Courvoisier Cognac, and while this sophisticated brandy is usually considered an indulgent sipper by itself, it also lends itself well to mixed drinks. The rich and complex cognac pairs perfectly with red wine, apple, cinnamon, star anise, nutmeg, and lemon juice. Plus, it couldn’t be easier to make. Just mix all the ingredients together, stir, strain — and you’ve got a drink that’s perfect for sipping solo by the fire or enjoying with friends.

Pro-tip:
Double straining can be used when a cocktail includes solid ingredients that you don't want in the final drink. When double straining, pour the drink through two strainers — a normal strainer and a fine-mesh/tea strainer.
To make cinnamon simple syrup, add 1 cup of white sugar and 1 cup of water to a small saucepan, bring to the boil and stir until the sugar is completely dissolved. Add cinnamon sticks, cover and simmer for about 5 minutes. Transfer the liquid to a small bowl and refrigerate until chilled. Strain before using.
