Luscious Leg of Lamb
Celebrate the season with this tender, slow-cooked lamb, infused with garlic and oregano. Simmered in a flavourful broth, it’s the perfect centrepiece for your holiday feast!
| 1 | Preheat the oven to 140°C. |
| 2 | Pierce the lamb on the fatty side and insert cloves of garlic into each incision, spaced about 5 cm apart. |
| 3 | Drizzle the lamb with a little olive oil and season generously with salt and pepper. |
| 4 | Heat a large, ovenproof casserole pan and brown the lamb on all sides. |
| 5 | Add the halved garlic, onion, dried oregano, Greek salad dressing, stock or water, lemon juice, and thyme to the pan. Cover with a lid. |
| 6 | Place the casserole in the oven and allow the lamb to slow cook for 4-5 hours, or until the meat is tender and falling off the bone. |
