The Ultimate Elevated Surprise Cake

Ingredients

Malva pudding:

3 Vanilla sponge cake mixes
2 large packets (125g each) Speckled eggs
1 Packet Galore candy-coated milk chocolate eggs
  Blue, yellow & pink food colouring

 

Butter Icing:

1 ½ cups Softened butter
4 ½ cups Icing sugar, sifted
2 tsp Vanilla essence
  Lemon juice

1 ½ cups Softened butter
4 ½ cups Icing sugar, sifted
2 tsp Vanilla essence
  Lemon juice

Method

Vanilla sponge cake

1 Preheat oven to 180°C.
2 Grease and line three 18 – 23 cm springform cake tins with baking paper.
3 Make the cake batter according to package instructions.
4 Divide batter between cake tins and bake for 25 – 30 minutes.

Cool in tin for 5 – 10 minutes, then unmould and leave to cool on a wire rack.

 

Ultimate elevated surprise cake

1 Hollow out the centre of two cakes using a 10 cm cookie cutter.
2 For the icing — add vanilla essence to butter, then beat until fluffy.
3 Add icing sugar in 3 – 4 batches, whisking well to incorporate before the next addition.
4 Add lemon juice and mix until smooth.

Spread about 2-3 tablespoons of icing between the two hollowed cake layers and sandwich.
6 Tip in speckled eggs, add more icing and sandwich closed with last layer of cake.

Cover entire cake with a thin layer of icing and allow to set in the fridge until firm.
8 Divide remaining icing between three bowls.
9 Add 2 – 3 drops of food colouring to each bowl, making sure you end up with three separate colours.
10 Decorate cake with icing, starting with blue at the bottom, yellow in the middle, and ending with pink on top.
11 Top with crushed candy-coated milk chocolate eggs and crushed speckled eggs.
12 Serve & enjoy!
