GOURMET GRILLED CHEESE

Buttery, crispy, and filled with delicious melted cheese and garlicky mushrooms — this Gourmet Grilled Cheese sandwich will change the way you think about toasties! If you feel like venturing out of your normal grilled cheese routine during the colder months of the year, try this recipe.

Ingredients

1 tbsp Olive oil
250g Mushrooms, sliced
2 tbsp Butter
2 Garlic cloves, crushed
 ½ tsp Chilli flakes
1 tsp Dried oregano
1 tsp
Lemon juice
  salt and pepper to taste


For the grilled cheese:

8 Slices sourdough bread (any bread will do)
1 cup Mozzarella cheese, grated
1 cup
Mature or sharp cheddar cheese, grated
  Butter
1 tbsp Olive oil
250g Mushrooms, sliced
2 tbsp Butter
2 Garlic cloves, crushed
 ½ tsp Chilli flakes
1 tsp Dried oregano
1 tsp
Lemon juice
  salt and pepper to taste


For the grilled cheese:

8 Slices sourdough bread (any bread will do)
1 cup Mozzarella cheese, grated
1 cup
Mature or sharp cheddar cheese, grated
  Butter

Method

1 Heat a large frying pan over medium-high heat. 
2 Add butter to the pan and melt, then add the garlic, chilli, oregano, and mushrooms.
3 Allow the mushrooms to fry until golden brown. 
4 Season with salt, pepper, and lemon juice. Remove from the heat and set aside.
5 To assemble the sandwiches, mix the mozzarella with the cheddar. 
6 Divide the cheese between four slices of bread. 
7 Top with mushrooms and sandwich with the remaining slices of bread.
8 Generously butter both sides of the sandwich.
9 Preheat a non-stick pan over medium heat. 
10 Add the sandwiches and cook until the cheese has melted and the sandwiches are golden brown and crisp on both sides.
11 Remove from the pan, slice, and serve. 

 

Pro-tip:

Use thick slices of good quality bread. Of course, regular bread will work but if you want a fantastic grilled cheese sandwich, using sourdough or another type of good bread will make all the difference.
